Authentic Thai Tea!

My new friend from church is from Thailand! We went to a Thai restaurant the other evening where she introduced me to Thai Tea (thanks Mem!) ...and then another new friend brought me some yummy samples to try (thanks Nora!)...and now it is my new favorite *cold* drink! Yum!

Here's is the easy peasy recipe for Authentic Thai Tea.

Iced Thai Tea

  • Sugar (to taste. I use brown. Authentic is to use white or sweetened condensed milk)
  • Half & Half  or full cream (to taste)
  • Ice

Steep 1 tea bag (or more for stronger, authentic taste) in hot water for at least 3 minutes and up to 15.  Add sugar and let cool. Fill a glass full of ice and add sweetened, cooled tea. Add cream. Don't stir. Enjoy!

Sausage, Alfredo Shells and Peas: Our New 5 Ingredient Favorite

Easiest 5 Ingredient Meal Ever and my family LOVED it!

Annie's Organic Alfredo Shells and Cheddar (make according to pkg directions)
Add 1 bag of peas in the last 4 minutes of boiling
Drain and add the cheese packet, milk and butter called for on package. Add turkey sausage and heat until warm. So yummy!

Chocolate Chip Shortbread Cookies: Eggless, Low Sugar and GREAT dough for eating!

My favorite edible cookie dough recipe, but even yummier when baked!

1 cup butter (no substitutions!)
1/2 cup brown sugar
1 tsp. vanilla
2 cups flour
1/4 cup cornstarch
1/2 cup mini chocolate chips (I like to use a whole bag for chocolate-ier results!)

Mix well. Form into 1 inch balls and smash down with fork or bottom of glass. You can also form into a roll, place in waxed paper and refrigerate. Then slice into desired size and bake at 300 degrees for 25 minutes.

 I like to make extra to keep on hand in the fridge for when someone wants a cookie in the house--or to just nibble on the dough! :-) Enjoy!
